In the late 1990s, Meg and Derrick Gordon decided to retire to Connamara. Siobhán Ní Gháirbhith grew up near the Gordons and although she had trained as a national school teacher, she was always keen in doing something interesting and sustainable with her parents farmland. She had always loved the delicious goat milk and cheese that Meg and Derrick had produced. A year of cheesmaking training and a business course later , Siobhán bought over the business from the Gordons, moved the goats over to her parents land (along with the all important kitchen table!) the modern era of St Tola began!
This picture was taken around 2000, just a Siobhán was getting into her stride and bringing out new packaging!
